A beautifully zesty & textured salad, make it your own by adding ingredients you enjoy. The feta cheese can be removed to replace with some grilled king prawns, crispy pork belly or any other choice of meat.
For the Salad;
4 Asparagus spears, sliced thinly on an angle
1 Head of baby gem lettuce, picked & washed
150g Cubed feta cheese
¼ Head of radicchio, torn & washed
Seeds of 1 pomegranate
For the Dressing;
20mls fresh lemon juice
15mls extra virgin olive oil
1 teaspoon Maldon sea salt
½ teaspoon freshly grd black pepper
1. Place all the salad ingredients in a large mixing bowl.
2. Make the dressing by adding the salt to the lemon juice, whisk vigorously while incorporating the oil slowly until emulsified.
3. Dress the salad with all of the dressing, toss gently through your fingers & place in serving dish.
